When making a XL loaf of white bread in a bread maker we have had better results with reducing the yeast in the recipe slightly (by about 20%).

 

We have had better results with wholemeal breads when using 70% wholemeal flour and 30% extra strong flour.

 

To get a crisp crust on your bread, place a roasting tin in the bottom of the oven while it is heating up. When you place the bread in to oven also quickly pour a glass of cold water into your roasting tin and close the door. This produces steam and allows for a crispier crust.

 

Wondering how long to knead your dough for? Some people don’t like kneading their dough for very long as it hurts their hands, however you get better results the longer you knead your dough so try and knead for 10 mins or till it stops being sticky to touch.

 

How do you tell is you have kneaded your bread enough? To see if it is kneaded thoroughly, take a small bit of dough and stretch it between your fingers to make a thin, translucent sheet of dough. If it doesn’t stretch out or it tears easily then it hasn’t been kneaded for long enough, so keep kneading it for a bit longer.
