This flour is made from the variety Performer, chosen for its superior baking qualities. With a subtle yet distinctive flavour, this flour adds complexity without overpowering your bake. It’s perfect for bakers who want a mild rye character, making it a versatile choice for a range of bread styles.
This flour is best suited for bread baking and is an excellent choice for feeding a sourdough starter. This flour has a 65–70% extraction rate, striking a balance between the depth of wholemeal rye and the lightness needed for a softer crumb. With 10.0g of fibre per 100g and 7.3g of protein per 100g, it offers both nutrition and performance in your baking.
Best used within 6 months of milling. Store in a cool, dry place.
