This flour is ideal for bread baking and perfect for feeding a sourdough starter. This flour has a 65–70% extraction rate, striking a balance between the depth of wholemeal rye and the lightness required for a softer crumb. Each 100g contains 10.0g of fibre and 7.3g of protein, offering both nutrition and performance.
