Milled from a carefully selected mix of varieties, Paragon and Fredericia. Paragon is a British Class 1 spring-sown bread wheat, known for its excellent grain quality. Fredericia is a European winter wheat that delivers a fantastic yield, though it requires good sunshine levels in July and August for optimal results.
This flour is ideal for bread baking, producing hearty, flavourful brown loaves. For a lighter, higher-rising loaf, we recommend a 50:50 blend with our Strong Bread Flour, retaining wholemeal’s depth while ensuring excellent rise. With a 100% extraction rate, nothing is removed or added, preserving the natural nutrition of the germ and bran. Each 100g contains 8.1g of fibre and 13.2g of protein, delivering both nutrition and performance.
Best before: 6 months from milling.
