We grow it, we mill it, we pack it. 100% wheat grain, nothing added. This flour is made from a carefully balanced mix of varieties, Paragon and Fredericia. Paragon is a British Class 1 spring-sown bread wheat, delivering consistently high grain quality, despite a lower yield. Fredericia is a European winter wheat, offering a higher yield, though it requires good sunshine levels in July and August for optimal results.
This flour is best suited for bread baking, producing excellent brown bread, a healthier and more flavourful alternative to white loaves. For best results, we recommend a 50:50 mix with our Strong Bread Flour to create a loaf that retains wholemeal’s depth while ensuring a well-risen texture. This flour has a 100% extraction rate, nothing is removed or added, preserving the natural nutrition of the germ and bran. With 8.1g of fibre per 100g and 13.2g of protein per 100g, it delivers both nutrition and performance.
Best used within 6 months of milling. Store in a cool, dry place.
