Milled from the variety Zollenspelt, this ancient grain was first introduced to Britain by the Romans, earning the nickname "marching grain" due to its high energy content. This is a versatile flour that produces a lighter, slightly nutty flavoured, loaf.

 

Naturally rich in essential vitamins and minerals, including iron, magnesium, phosphorus, zinc, and niacin (vitamin B3), it’s a popular choice for those seeking an alternative to conventional wheat. While not gluten-free, spelt can often be easier to digest for those with mild wheat sensitivities. With an 85% extraction rate, this flour retains more of the bran for added depth of flavour and nutrition. Each 100g contains 7.6g of fibre and 12.3g of protein, bringing both substance and character.

 

Best before: 6 months from milling.
