Grown, milled, and packaged on our farm. Made from 100% spelt grain, our flour is pure, natural, and completely additive-free. This flour is made from the variety Zollenspelt. Spelt is an ancient wheat variety introduced to Britain by the Romans, earning the nickname "marching grain" due to its high energy content.
This is a versatile flour that produces a lighter, slightly nutty flavoured, loaf. Spelt is naturally rich in essential vitamins and minerals, including iron, magnesium, phosphorus, zinc, and niacin (vitamin B-3). This makes it a popular choice for those seeking an alternative to conventional wheat. Spelt can often be easier to digest for those with wheat sensitivities and gluten intolerances, though it is not gluten-free. This flour has an 85% extraction rate, retaining more of the bran for added depth of flavour and nutrition. With 7.6g of fibre and 12.3g of protein per 100g, it brings both substance and character to your baking.
Best used within 6 months of milling. Store in a cool, dry place.
