Milled from the variety Zollenspelt, spelt is an ancient wheat first introduced to Britain by the Romans, earning the nickname “marching grain” due to its high energy content. With a mild nutty flavour and a lighter texture, this flour is perfect for creating soft, slightly sweeter loaves. 

 

Naturally rich in essential vitamins and minerals, including iron, magnesium, phosphorus, zinc, and niacin (vitamin B3), it’s a popular choice for those seeking an alternative to conventional wheat. While not gluten-free, spelt can often be easier to digest for those with mild wheat sensitivities. With a 67% extraction rate, the bran is carefully removed to create a lighter flour. Each 100g contains 6.7g of fibre and 11.9g of protein, delivering both flavour and nutrition. 

 

Best before: 6 months from milling.
