Milled from the variety Mulika, a British Class 1 bread wheat renowned for its strength and high protein content, this grain consistently meets the magic 13% protein level required for excellent breadmaking. With an 85% extraction rate, it retains more of the wheat’s natural bran than white flour, offering a deeper flavour and a more substantial texture.
It strikes the ideal balance between wholemeal and white flour, delivering a hearty taste with great elasticity for excellent baking results. Ideal for bread baking, it works beautifully on its own or blended with other flours. Made by removing only the roughest bran from wholemeal flour, it preserves the grain’s natural goodness while achieving a lighter, softer texture. Each 100g contains 7.6g of fibre and 12.9g of protein, providing both nourishment and strength.
